I have always been a meal planner, however in the days of a pandemic and trying to limit our grocery store trips to one per a week it is even more of a must. I have decided to start sharing our weekly menus because meal planning may be hard or new for someone and that way any one who wants to can use ours if they wish. I am also always looking for new recipes so I figured others may be too :) Here is our meal plan for this week! Hope something catches your eye!
Sunday:
Buffalo Chicken Panini using the Instant Pot
Ingredients:
2-3 thawed or frozen chicken breasts (you just cook them longer if they are frozen)
3/4 cup of Chicken Broth
1 cup (or more) of Reds Buffalo Sauce
Sliced Bread
Slices of Cheese (we use pepper jack)
Ranch Dressing to top the sandwiches
Additional Toppings (all optional): Shredded Lettuce and/or diced celery and carrots
Place the chicken breast and chicken broth into the instant pot. Use the manual setting for 15 minutes (25 if you have frozen chicken breast). Once done, allow it to naturally release for 5-10 minutes. Then remove chicken to another bowl and shred the chicken (I use a hand mixer to do this). After you shred the chicken, add the buffalo sauce and mix well. The next step you can use the stove or a Panini maker. I have a George Foreman so we use that. Butter the outside of the pieces of bread and then layer cheese, shredded chicken, drizzled ranch and cheese. Place on the the panini maker (or a skillet on your stove) and cook. Once the cheese is visibly melted on both sides the sandwich is done (if you are cooking on a stove you will need to flip your sandwich).
Monday:
Beef Kabobs w/ Oven Potatoes
Beef Kabobs Ingredients:
1 2-3 pound Beef Chuck Roast
1 Bottle of Italian Dressing
2 Green Peppers, chopped into bigger pieces
1 Yellow Onion, chopped into bigger pieces
Cut your beef roast into 1.5x1.5 inch chunks and place into a bowl. Dump enough Italian Salad Dressing into the bowl with the meat to coat the pieces. Place in to the fridge for 12-48 hours. When read to put together the kabobs use meat, chopped green pepper and onion to do so. Cook on the grill.
Oven Potatoes Ingredients:
1 pound of diced red potatoes
1 cup of diced onion
1 tbsp of avocado or olive oil
Garlic powder
Onion powder
Lawry's seasoning salt
6 tbsp of butter, sliced
Parsley
Preheat oven to 400 degrees. Dice red potatoes into .5 inch x .5 inch cubes. Place into a bowl that will be large enough to mix. Add diced onion and oil to the bowl and stir to coat the potatoes throughly. Then sprinkle the garlic powder, onion powder and Lawry's seasoning salt over the potatoes. I never measure these out...I just sprinkle them on. Then stir again. Prepare a baking sheet with two pieces of foil that are crossed to look like a "t" and long enough to fold over and cover the potatoes Pour potato mixture onto a piece of foil. Add the 6 tbsp of butter, sliced, over the potatoes and sprinkle parsley. Fold foil over the potatoes and place in the oven for 1.5 to 2 hours.

Homemade Cheeseburgers with Air Fryer Sweet Potato Fries
Burger Ingredients:
1.5 lbs of ground beef (sometimes I do 1lb of turkey beef and 1lb ground turkey)
1 egg
1 tablespoon of Worcestershire sauce
Garlic powder
Onion powder
Lawry's seasoning salt
In a large bowl add all of the ingredients listed above. I never measure out the seasonings...I just sprinkle them on. Using your hands mix the all of these ingredients together. Divide into 4-5 balls (depends how thick you want your burgers). Flatten out each ball into a patty shape. Cook on the grill.
Air Fryer Sweet Potato Fry Ingredients:
3-4 Sweet Potatoes, chopped into fry strips (.5inch thick)
Avocado Oil
Corn Starch
Cajun Seasoning
After cutting the sweet potatoes into fry strips that are about .5 inch thick, add them to a large ziplock bag. Add enough avocado oil and cornstarch to coat the strips along with the cajun seasoning. Then seal the bag and shake so that all of the strips are coated. Place in a 350 degree preheated air fryer for 8 minutes. Shake basket half way through cooking. Serve with ranch dressing.
